Dr. B’s Turkish Delight Cookie Prescription

 

Ingredients:

1 cup or 2 cubes of Butter

¾ cup each, White Sugar & Brown Sugar or 1 ½ cup of Raw sugar

2 – Eggs,

1 ½ tsp Vanilla,

1/2 to 1 cup - currents

1 cup each chopped; Turkish Apricots, Ground Pecans

1 cup Vanilla Chips

2 ¼ cup Bleached Flour,

1 tsp Baking Powder

1 tsp Baking Soda

 

Method:

Mix Butter & Sugar in a stout tabletop mixer, then

Add eggs & Vanilla, Apricots, Currents, pecans & Vanilla Chips, Flour and leavening agents

Mix well.

May be baked on greased cookie sheet or on un-greased cooking stone.

Preheat oven to 350 degrees.

Make cookie balls as large as desired – then flatten them.

Place cookies in oven and bake.

Usually done in approximately 10-15 minutes depending on size. In GL cook 14 min.

For best results, remove cookies, cool for 3-4 minutes then place on vented wire rack.

Note: You can make cookie dough ahead of time. Make a roll out of it, cover with tinfoil and place in freezer. When you need cookies just take the roll out and let it thaw. Slice off desired amount and bake as written above. Don't sample the frozen dough, you may end up eating it all prior to baking.
