Dr. B's Key Lime Pie   

4  Eggs,

1 pkg Lime Jell-O,

3/4 cup water, 

4 oz. Cool Whip,

1/2 cup Sugar,

1/4 Tsp. Cream of Tarter,

1/2 cup Lime Juice,

1/4 Cup Sugar.

   

Separate eggs. Whisk egg yokes, 1/2 cup sugar, lime juice, and lime jell-o.

Cook over low heat (250 degrees) whisking constantly until thickens & first bubbles appear. DO NOT BOIL.
Cool mixture in refrigerator in large pre-cooled bowl.
Whisk every few minutes (returning bowl to the fridge) and when mixture begins to set up, add Cool Whip.
Then fold in stiffen beaten egg whites to which Cream of Tarter and sugar has been added.

Pour into 2 short bread pie crusts. Refrigerate.

Uncle John cautions, "The critical time is when you are ready to add the Cool Whip. The longer you can hold off and still make a smooth mixture, the thicker it will make the pie.
