Great Oatmeal Cookies

1 cup - butter (two sticks)
2 cups – sugar
2 – eggs
¼ teaspoon – Salt
1 cup - Quick Oatmeal (blend into fine powder)
1 cup – Raisins (see note)
2 teaspoons – Baking Soda
2 3/4 cups – Flour - plus up to ½ cup more
1 Teaspoon – Vanilla

Cream butter and sugar,
Add eggs and beat well,
Stir in flour mixed with baking soda in it,
Add oatmeal, raisins, vanilla and blend together,
You might need to add additional flour to get the right dough consistency.
Let dough stand over night.
Roll up walnut size mounds of dough,(11/4" diameter)
Roll each in sugar and place on cookie sheet,
Bake at 350 for 12 minutes or until golden brown.

Should make about 4 dozen cookies.

Note. Cover raisins with water in a saucepan and cook until soft. Let cool then place raisins and water in blender and chop. If you have leftover dough store it in a plastic container until used. Can be frozen
